Shirley Camp earned a bachelor's degree in vocational home economics education from Western Illinois University and a master's degree in extension education from the University of Illinois. Following an internship at the University of New Mexico, she completed the registration exam for dietetics. She is also a licensed dietitian in the state of Illinois.

Camp is a member of the Illinois Association of Family and Consumer Sciences, the National Association of Family and Consumer Sciences (NEAFCS), Epsilon Sigma Phi (ESP)and the American Dietetics Association.

Camp has received numerous awards, including the NEAFCS Distinguished Service Award, and both the NEAFCS and IEAFCS Communications Award for team-package program. She is also the recipient of the Outstanding Team Award and the ESP Team Award for the Food Safety Sanitation Recertification Course.

Program Offerings

Dining with Diabetes is a three part series that provides clientele who have diabetes with important information on how to prepare food. The sessions cover information on desserts, main dishes and side dishes. Food tasting and recipes are provided in these sessions.

Serve It Safely is a food safety program for organizations with volunteers who serve food to the public for fundraising or community service. Information presented in the program includes planning, purchasing, preparing and storing of food for public service. Course length is five hours.

Heart Healthy Cooking is a two-part series that helps participants increase their knowledge of risk factors, dietary factors and the benefits of exercise when dealing with heart disease. Information presented includes menu suggestions and food tasting of heart healthy recipes.

Specialty Home Food Preservation is a food safety class designed to assist individuals who want to preserve foods such as salsas, jams and jellies, and other similar foods for home use or gift giving. The latest food preservation information is included in these programs, along with demonstrations on how to safely preserve foods at home.

Calcium Curriculum for Schools is a new curriculum developed by Nutrition and Wellness Team Members and is designed to be presented in schools to pre-teenagers. In two sessions, students will learn the importance of including dairy foods in the diet, benefits of these foods and possible taste testing.

Take Charge Challenge is a wellness program that incorporates healthy eating and exercise to help individuals with behavior change towards a healthy lifestyle. Principles of the Food Guide Pryamid and the Dietary Guidelines are included in the program.
