The mission of Horticulture Extension Education in Rock Island County is to provide gardeners, landscapers, green industries, and communities with educational resources and opportunities to learn through direct teaching, hands-on workshops, community events, volunteer programs, and consultation.

Healthy Eating Fruits and Vegetables

Apple-cheese Salad

2 apples, cored, chopped; 1/2 cup seedless raisins; 1/2 cup celery chopped; 1/4 cup low fat cheddar cheese, cubed or shredded; 1/4 cup nuts; chopped; 1/4 cup orange juice; 8 ounces low fat vanilla yougurt; Cinnamon, to taste (optional)

1) In medium bowl, combine apples, raisins, celery, cheese and nuts; 2) Blend orange juice into yogurt; 3) Pour over salad and toss well; and 4) Sprinkle with cinnamon, if desired.

Nutrition Facts (per serving) - Calories 140 ~ fat 3 g ~ calories from fat 35 ~ sodium 65 mg ~ total carbohydrate 23 g ~ fiber 2 g

The program is designed to increase the availability of University-based horticultural information to local communities and individuals through trained volunteers known as Master Gardeners.
