In the United States, an estimated 24 million pounds of horseradish roots are ground and processed annually to produce approximately 6 million gallons of prepared horseradish. It makes the US the number one producer of horseradish around the planet, and as you'll hear Illinois is far and away the top producer of the hot crop.
