Semi-Vegetarian
You can lose weight and become healthier by becoming a semi-vegetarian? A semi-vegetarian is someone who supplements a regular diet of vegetables, beans, grains, fruit and dairy products with small occasional servings of meat, poultry and fish. A serving of meat is one egg, 2-3 ounces of cooked, lean, ground beef, fish or poultry (about the size and thickness of a new deck of playing cards).

Cooking Suggestions
To make a "reduction" to use instead of gravy, start with 1 quart of broth, boil until it is reduced to about 1/2 cup. Season with salt, pepper and herbs such as thyme or rosemary. Use over mashed potatoes, or other vegetables.
To make soup:
To 2 quarts broth add, 2 cups cooked noodles, 1 cup sauteed mushrooms, 1 cup frozen green peas and four thinly sliced green onions, simmer for 10 minutes. Add 1 teaspoon thyme and oregano. Simmer 5 minutes longer. Serve. Or use your favorite frozen vegetable combination.

Apples & More
"An apple a day, helps to keep the doctor away." The update on an old adage makes it more in line with current research in diet and it's relationship to chronic disease. Apples are a good source of dietary fiber, both soluble and insoluble. The soluble kind is mostly pectin. Studies indicate that pectin and other soluble fibers are effective in lowering cholesterol. The insoluble part helps to keep your intestinal tract healthy and functional. Aside from the health aspect, apples taste good. They travel well, store well and are easy to eat out-of-hand. The best apples are locally grown and fall signals apple picking time.

A Fast Walk
The faster you walk, the more calories you burn. For example, a 60-minute walk at 3 MPH burns 240 calories (based on a 150-pound person). Speed up to 4 MPH and you can blast those calories in just 42 minutes. Keep it up for an hour, and you'll burn nearly 50 percent more calories–364 total. At that pace, walking 5 days a week, you could lose an extra 10 pounds a year!
