Summer Food Handling

In the summertime, foods can quickly reach the "Danger Zone"—the temperatures between 40 and 140-degrees F. So it's more important than ever to be sure foods are handled properly.

According to Jananne Finck, Extension nutrition and wellness educator, summer food handling is especially important as food borne illnesses increase during the summer.

When buying food, put refrigerated or frozen items in the shopping cart just before heading to the checkout. Be sure raw foods are bagged separate from cooked foods and produce. When loading the car, keep perishable items inside the air-conditioned car—not in the trunk.

Unload perishable foods from the car first and immediately refrigerate or freeze. Be sure to wrap any packaging that might have torn during transport, but it's best to leave a product in its original packaging to keep from introducing bacteria.

Wash hands before and after handling raw meat and poultry.

Handle perishable foods quickly and place into the oven, refrigerator or freezer as soon as possible.

Remember, keep cold foods cold (40 F and below) and hot foods hot (140 F and above), wash hands and surfaces often and cook foods to proper temperatures.

For more information on summer food handling, contact your local University of Illinois Extension office or call the USDA Meat and Poultry Hotline at 1-888-674-6854, Monday through Friday, 10 a.m. to 4 p.m., Eastern time. You may also visit the USDA/FSIS website at www.fsis.usda.gov.
