When purchasing turkey, allow one pound of turkey per person for fresh or frozen whole turkeys. According to Jananne Finck, Universtiy of Illinois Extension nutrition and wellness educator, consider the number of people to be served and leftovers desired when deciding the amount of turkey to buy for your meal.
If purchasing frozen, pre-stuffed turkeys, allow 1 ¼ pounds of turkey per person.
