Carol C. Schlitt is an Extension educator, nutrition and wellness with University of Illinois Extension. As a nutrition and wellness educator, her primary responsibility is to help individuals acquire knowledge and skills to improve and maintain their nutritional well-being, health and to provide food safety education for consumers and certified food professionals.
Carol earned her bachelor's degree in home economics at the University of Illinois and her master's degree in adult education at SIU-Edwardsville. She is a certified consumer and family scientist of the American Association of Family and Consumer Sciences (AAFCS), a certified HACCP Manager, and a Food Safety Instructor with the Illinois Department of Public Health.
Carol is immediate past-president of the national Joint Countil for Extension Professionals (JCEP), and was president of the 3,500 member National Extension Association of Family and Consumer Sciences (NEAFCS) in 2007.
