"Get More Greens"
Are you looking for quick, easy, nutritious recipes? Welcome to the Cook County Family Nutrition Program Recipe of the Month. It is important to include fresh fruits and vegetables as part of your daily meals. This month we are focusing on "Getting more Greens" in our diets. The vegetable of choice is Cabbage! Cabbage is a great source of Vitamins K and C. They are also a good source of dietary fiber. Try preparing our easy Cabbage Pasta Soup!
Cabbage Pasta Soup
Ingredients:
· 1 Tbsp Olive Oil
· 4 cups fresh cabbage chopped
· 1 cup fresh carrots chopped
· 1 clove fresh garlic
· 1/2lb turkey ham
· 3 cups light reduced sodium chicken broth
· 1 1/2 cup pasta shells, small
Directions:
Wash hands. Heat Olive Oil in a large pot. Add cabbage, carrots, garlic and turkey ham, sauté for about 3 minutes. Add chicken broth and cook mixture for about 10 minutes over medium heat. Add uncooked pasta and cook for an additional 10-15 minutes. Serve hot.
