Recipe of the Month
Fruit Tossed Salad (6 servings)
Ingredients: 4 cups salad greens 2 small oranges, peeled and sectioned 1 large apple, thinly sliced 1 cup crushed pineapple, drained 1 small cucumber, thinly sliced 1 celery stalk, chopped Dressing: 1/4 cup cooking oil 2 Tablespoons honey 3 Tablespoons lemon juice 1/4 teaspoon paprika 1 Tablespoon chives (optional) 1/2 cup walnut pieces or sunflower seeds Instructions: 1. In a salad bowl combine greens, orange, apple, pineapple, cucumber and celery. 2. In a jar combine dressing ingredients and shake well. 3. Pour dressing over salad and toss. 4. Sprinkle with walnuts or sunflower seeds. NUTRITION FACTS (per serving) - Calories 140 ~ fat 7 g ~ calories from fat 60 ~ sodium 15 mg ~ total carbohydrate 20 g ~ fiber 4 g
